Our Stills

The centerpiece of our distillation process is our custom-built copper stills, a true gem crafted by Vancouver-based Revival Stillworks. Comprised of a 4,000-liter stripping still and a 3,000-liter spirit still, and complemented by a hybrid model, these state-of-the-art pieces of equipment, installed in 2024, are essential for the production of our spirits.

Production automation

Our operations rely on sophisticated automated control systems—the true "brains" of our distillery. Designed by Foundation Control and based on Siemens programmable logic controllers (PLCs), these systems guarantee perfect reproducibility of our recipes, ensuring unparalleled quality and consistency for every bottle. From distillation to cleaning systems (CIP) and even precision agriculture, automation, while complex to implement, is essential to our operational excellence.

Automation is at the heart of our production equipment.

7 Latina fermenters transform grain wort into "distiller's beer" (or wash) thanks to precise temperature control.

The brewing equipment includes a 'Mash Tun' and a 'Lauter Tun'.

We also have large hot and cold water tanks, essential for controlling temperatures during the process.

Additional tanks are used to collect and separate the different alcohol fractions after distillation.

Distillerie des Cantons is equipped with a complete range of machinery to cover all its agricultural operations.

Agricultural equipment

In the fields, the distillery uses tractors, a modified Kuhn cultivator, and a spring harrow for mechanical weeding. Two 1985 John Deere combines, better suited to their fields, are used for grain harvesting. Broadcast seeding and precision farming methods (GPS, sensors) are also used. Swathers cut the grain for field drying. A versatile Mecalac mechanical shovel and a 5-tonne dump trailer complete the equipment.

Equipment for handling
and grain processing

Two 100-ton silos are dedicated to storage, one of which is equipped with a propane drying system. Grain transportation and screening are facilitated by grain wagons and grain augers.
Our grain room uses an automated handling system, which includes 2 grain mills, roller and hammer.
