The Eastern Townships Distillery's mission is to achieve global recognition through the production of whisky of unparalleled quality, deeply inspired by the terroir and spirit of the Eastern Townships, while maintaining a firm commitment to organic practices and cultivating a passion for the art of distillation.
The pillars of the project
Integrated and local production, through control of the entire supply chain on our land in the Eastern Townships, including the cultivation of our own cereals.
Regenerative agriculture: A fundamental commitment to regenerative agricultural practices for barley and rye, with specific techniques and crop rotation.
Diversification of resources through the cultivation of plants and trees for future products and resources.
The construction of infrastructure, including the main distillery building, the acquisition and installation of brewing and distillation equipment, and agricultural equipment.
The development of the production process by establishing a rigorous biological process, from malting to distillation, aiming for operational excellence and automation for consistency.
The cellar, an essential building for aging whisky.
Aging and maturation in oak barrels for a minimum period of 3 years and ideally 10 years.
Product diversification which will result in the possible production of other spirits.
The team and the company culture, which is based on passionate craftsmen, guided by strong values.
