Yes! Through our private cask offering, you have the opportunity to acquire a cask of whisky distilled specifically for the year in question.
Can I purchase a whisky cask?
To be designated as "Canadian Whisky," Canadian law requires a minimum of three years of aging in small oak barrels. Our flagship whiskies age from 3 (the legal minimum) to 12 years in a blend of different types of oak barrels. Limited editions may age longer, but we only bottle when the balance of wood, spice, and grain sweetness is optimal, never according to a fixed schedule, ensuring superior quality in every bottle.
How long does your whisky age before being bottled?
The final number of bottles you will obtain from your cask depends on three key factors: maturation time, the "angel's share" (natural evaporation), and the alcohol content chosen for your final bottling.
At our distillery, our barrels are 200 liters. Our angel's share is estimated at 4.5% evaporation per year in our rickhouses. We use a 700 ml bottle format (international standard format).
Bottling offers two main avenues that will impact the yield:
1. Cask Strength +/- 55%: The whisky is bottled as is, directly from the cask, offering an intense and pure experience.
2. At 40%: The whisky is delicately reduced to 40% alcohol by the addition of our pure spring water, which increases the total liquid volume and, consequently, the number of bottles.

Important note: Each oak cask is unique and "breathes" differently. These figures are provided as a guideline. The exact volume and final alcohol content upon exiting the cask may vary slightly depending on the whims of nature and the wood.
How many bottles can a whisky cask produce?
The pricing structure for spirits in Quebec includes several components, consisting of government taxes and the markup of the Société des alcools du Québec (SAQ).
Here is the detailed breakdown of the fees that apply upon the bottling of your cask:
- Federal excise duties: These are set at $13.84 per litre of absolute alcohol (LAA). For example, for a standard 700 ml bottle bottled at 40% alcohol, this amount is equivalent to approximately $3.88 per bottle.
- SAQ markup: An institutional markup of 45% is applied.
- Specific tax on alcoholic beverages: A provincial tax of 2.5% is specifically added to the sale of spirits.
- Sales taxes (GST and QST): Finally, the standard sales taxes totalling 14.98% are calculated on the final price.
In Quebec, what are the applicable taxes and markups on a bottle of whisky?
Not at the moment, but stay tuned for our planned opening in 2028. You will discover our brewhouse, our copper stills and will be able to taste our spirits directly from the cask.
Can I visit the distillery for a tasting?
No, not at the moment. We favor clean, grainy profiles: barley, rye, and sometimes corn, all sourced from our own land or from local producers. The result is a smooth spirit with aromas of vanilla, honey, and toasted grains, without the characteristic smoke of peated Scotch whiskies.
Do you use peat in your production?
Our whiskies are crafted from grains grown in Quebec and aged in a continental climate where temperature variations—cold winters and hot summers—accelerate the interaction with the wood. This results in more pronounced caramel and spice notes than in Scotch single malts (due to gentler aging) and a less sweet character than Kentucky Bourbon.
What distinguishes Cantons whisky from Scotch or Bourbon?
The wort contains gluten-containing grains (barley, rye, corn), but distillation removes most of the responsible proteins . Therefore, most people with gluten sensitivity can tolerate it. However, those with celiac disease should consult a healthcare professional.
Is your whisky gluten-free?
Our commitment goes beyond simply being "organic". We have chosen to cultivate our ingredients using the principles of regenerative agriculture because, in our view, it represents the most holistic and sustainable approach for our land and our future.
The regenerative method includes and goes beyond biological criteria by focusing on soil health as the top priority. The goal is not simply to avoid harming the land, but to actively restore it and improve its vitality over time.
