FOUNDER
Martin McNicolas
Founder of the Distillerie des Cantons de l'Est, Martin's initial epiphany occurred during a trip to Scotland. An entrepreneur, investor, and true whisky enthusiast, his vision is to create a renowned Quebec whisky that is a true celebration of the local terroir. He is the true soul of the project.
FARM MANAGER
Gautier ARCOUETTE
Gautier is responsible for organic farming (barley, rye) and farm equipment management. His extensive expertise acquired in Saskatchewan and his commitment to the environment guide the sustainable cultivation of the land.
MASTER DISTILLER
Louis Hinshelwood
With his experience at Dillon's Small Batch Distillers in Ontario, Louis brings unique expertise.
A graduate of the prestigious Heriot-Watt University in Edinburgh, Scotland, he brings over ten years of expertise to the creation of high-quality whiskies.
FARM LABORATOR
Olivier PAQUETTE
Olivier assists with daily and seasonal farm tasks. His role is crucial for field preparation, crop maintenance, and harvesting. He is also responsible for maintaining the farm's equipment and facilities.
ASSISTANT DISTILLER
Pierre NOLIN
Pierre works alongside the master distiller throughout all stages of production. He is responsible for operating and maintaining the equipment and preparing the ingredients. His role is essential to ensuring the quality and consistency of the spirits produced.
