This exceptional whisky is crafted exclusively from our own malted barley, grown on our land in the Eastern Townships using regenerative farming methods. Every step, from malting, brewing, and fermentation to double distillation, is meticulously executed in our copper pot stills at Revival Stillworks. The distillate is then carefully aged in American oak barrels to infuse rich and distinctive notes. This aging process, lasting a minimum of three years, with a target of ten years for the majority of our production, is greatly influenced by the fresh, clean air and significant temperature variations of the Eastern Townships, contributing to its unique character. This long journey, marked by patience and rigorous attention to detail, aims to forge a whisky of exceptional quality that will stand out and make a difference for our customers.
INFORMATION ABOUT LOTS AND BARRELS
This rye whisky is a bold and complex expression, crafted from the Brasetto cultivar, renowned for its rich aromatic profile. Our process begins with precise malting of the rye, using the Munich profile according to two distinct recipes: 10% malted/90% unmalted and 20% malted/80% unmalted. This dual approach allows for the development of a unique depth of character. The maturation is equally exceptional: we use 220-liter American oak casks from Bob Dylan's prestigious Heaven's Door distillery. These casks, traditionally used for wine, were previously used for a 9-month finishing period on Heaven's Door rye whisky, imparting intense, spicy notes and a subtly woody sweetness to our spirit.
