RYE WHISKY - SINGLE BARREL

We are keeping an eye out for a special barrel and to make a limited edition of our McNicoll rye whisky, shown here in its future bottle.
This exceptional whisky is crafted exclusively from our own rye and malted rye, grown on our land in the Eastern Townships using regenerative farming methods. We are currently experimenting with two blends (80% unmalted rye and 20% malted rye; and 90% unmalted rye and 10% malted rye) to deliver distinctive, spicy, and complex flavors. Every step, from malting, mashing, and fermentation to double distillation, is meticulously executed in our copper pot stills at Revival Stillworks. The distillate is then carefully aged in American oak barrels to infuse rich and distinctive notes. This aging process, which lasts a minimum of three years, with a target of ten years for the majority of our production, is greatly influenced by the fresh, clean air and significant temperature variations of the Eastern Townships, contributing to its unique character. This long journey, marked by patience and rigorous attention to detail, aims to forge a whisky of exceptional quality that will stand out and make a difference for our customers.
