Buckwheat, a shed, and a trip to the West Coast!

Hello dear friends and collaborators,
Here are the most recent developments at the distillery.
Agriculture
Good news! Over the past week, Gautier, our farm master, began the buckwheat sowing process!

Architecture
We have news about our shed! The team at _naturehumaine, our architecture firm, shared the plans for the hangar that will be located at the end of the property to protect our agricultural equipment. For our part, we are waiting for permits from the town of Mansonville to move forward with the construction of this building and start preparing the land this fall.
What excites me the most about the construction of the shed is that we will be using Gautier's sawmill. Basically, the building's beams and boards will come directly from the trees in the distillery's forest!
Distillery
We are approaching the time to select our stills! We have two suppliers in mind: Revival Stillworks and Specific Mechanical.
JF, the master distiller, and I are going to Vancouver in October, from the 24th to the 28th. Our adventure begins at the Artisan Distillers Canada Conference & Trade Show on Tuesday. Then, on Wednesday, we head to Victoria on Vancouver Island to visit our suppliers. Finally, we have appointments with distilleries that use the equipment from both manufacturers to see how these machines operate in the field.
