Spring has arrived with good news!
It's official: following the public hearing with the CPTAQ (Agricultural Land Protection Commission), we finally received a positive decision regarding the project. They acknowledged our argument that our project does not require authorization for non-agricultural use, as it now meets the definition of an agricultural activity under Article 1 of the Act.
Our gamble to continue the design phase without waiting for the final decision paid off, as we’ve made great progress!
Construction
We will complete the first design iteration of the distillery with the CIMA+ team in 2 weeks. We plan to submit our plans for the construction of the distillery and the access road to the town of Potton shortly after.
Our current timeline anticipates starting construction on the distillery in early September, getting the building closed in by December, which is when we will begin taking delivery of our distillation equipment.
The shed for storing agricultural equipment is well underway; Mother Nature is now dictating the pace of its construction.
Organic Agriculture
Good news for our organic winter rye: it successfully established itself despite the mild spells we had last winter. It has progressed faster than the grass and weeds. We are confident it will take over quickly and literally cut the grass from under the weeds' feet!
We received 4,200 kg of organic barley seeds last week; we are waiting for the fields to drain properly before starting to sow.
We took advantage of the sunshine last week to plant 75 plum trees along the edge of the 'Speyside' field with Jonathan from the firm Écomestible. We named this field edge the Plum Tree Trail!
We’ve added another piece of equipment to our weed-fighting arsenal: a tine weeder. It will allow us to uproot weeds and sow clover while leaving the grains undisturbed.
The foundations for our 2 silos are now poured and await the delivery of our silos in the coming weeks.
Distillery
The team at Revival Stillworks and Konig Brewing has completed the first phase of design for our equipment. Our master distiller, Jean-François, is validating everything one last time before giving his approval to launch production.
Marketing
We have completed our branding exercise with the firm ByHaus and are very satisfied with the result! We are gradually integrating the different brand elements into our communications and our online presence. You can already get a sneak peek on our website at www.distilleriedescantons.ca
