September Update: Infrastructure, Safety, and Final Touches on the Stills!

On this 9th of September, work is progressing nicely at the Distillerie des Cantons. We have plenty of great projects moving forward: our stills, our garage, and our rickhouse for storing our barrels. Let's take a quick tour!


Infrastructure: The Garage and the Rickhouse

Infrastructure projects might be a bit less exciting than actually making whisky, but they are absolutely necessary!

Behind me is our future workshop (the garage), which will allow us to maintain and repair our combine harvesters and agricultural equipment right here on site. Also under construction is our rickhouse (the building where we will age our barrels).

Safety First: A Massive Water Basin

When storing barrels of alcohol, having a high-performance fire protection (sprinkler) system is crucial. Out on the site, you can already see the concrete and steel rebar taking shape.

The first half of the rickhouse will sit on top of a massive water basin. Why? We would have loved to use the water pressure from the town of Mansonville, but unfortunately, the volume and pressure just aren't sufficient at our location. Therefore, this basin will hold a massive amount of water to feed our diesel pumps and run the sprinklers if needed. This is what will allow us to safely store all our barrels on site.

Final Touches on the Stills

Over on the production side, we are putting the finishing touches on the still installation! We are thrilled because we finally received the very last copper pieces (which were out getting a final polish) last week. Everything is now fully assembled!

Currently, several teams are hard at work on the equipment. The plumbers and the instrumentation and control experts are busy insulating the steam pipes, while the electricians are finishing up the connections for certain pumps located under the stills.

All this hard work is leading us to our main goal: starting up the distillery next Monday! We can't wait to see all these pieces in action. Stay tuned!
