Following distillation and barreling, our whisky’s journey leads to a place of absolute quiet and patience: the chai (our barrel warehouse). In this sixth episode of our "From Grain to Bottle" series, we take you inside this spacious facility, specifically designed to protect and age our premium spirits.
What Is a "Chai" and Why Does It Matter?
A chai is a dedicated warehouse built specifically for storing and aging whisky barrels. Safe from direct sunlight and influenced by the changing seasonal temperatures, our barrels will rest here for a minimum of three years. During this extended maturation, the interaction between the spirit and the oak wood imparts the whisky’s signature amber hue, its smooth texture, and its complex layers of flavor.
Fire Safety: Built to Protect Thousands of Barrels
Housing hundreds—and eventually thousands—of barrels filled with high-proof alcohol requires top-tier safety protocols. To protect our craftsmanship and our facility, we have integrated a heavy-duty fire protection system:
A 600,000-Liter Water Reservoir: This massive dedicated tank is kept full at all times to ensure an uninterrupted water supply for our fire sprinklers if needed.
A Dedicated Tractor Engine on Standby: To pump this massive volume of water with maximum efficiency, we installed a powerful tractor engine that remains on standby. If a fire is ever detected, this engine automatically roars to life, sending immense pressure through the system to feed the overhead sprinklers instantly.
Combining the art of aging with robust safety engineering, our warehouse is fully equipped to nurture our finest spirits for years to come!
