First Sowings of Buckwheat, Our Green Fertilizer

Hello dear friends and collaborators,

Here are the latest developments happening over at the distillery.

Agriculture

We have finished preparing the land for the fall sowings and our green fertilizer.

However, we found several areas where the presence of rocks is problematic; if they hit the equipment, it could cause damage. Gautier found a rock picker to gather them up, which was delivered to us last week.

Good news! With the help of our neighbour, Alex Bachand, and his tractor, we were able to remove the majority of the rocks. We are now completely ready for sowing!

Gautier sowed the buckwheat in a first field yesterday morning. Take a look at his video report!

Distillery

We are waiting for updates on our still quotes, incorporating our latest changes. JF and I are planning to visit the two manufacturers—both on Vancouver Island—from October 20 to 22.

We will take the opportunity to meet with local distillers, like those at Macaloney's Caledonian, which has a business model similar to ours. Finally, since we'll be heading to the West Coast, we will take advantage of the trip to attend the Artisan Distillers Canada Conference in Vancouver.

In addition, we got a head start on the time-and-motion analysis of our distillation equipment. By adding 20 hectares of rye to the 20 hectares of barley we initially planned, we are in a great position!

Basically, according to this week's forecasts, we will run out of time to distill all the harvested grains once our land starts producing at its nominal capacity—meaning in two or three years—without running the distillery on weekends. We'll keep you posted!
