As luck would have it, Gautier Arcouette, the neighbor to the distillery's land, is a jack-of-all-trades, including being a farmer and a specialist in large-scale grain crops.
His suggestion is that we grow our grains organically. He takes this project to heart because he has worked in the vast fields of Saskatchewan, where pesticides, genetically modified organisms (GMOs), and chemical fertilizers are used on a massive scale.
For our part, our goal remains the same: to make the best whisky in the world. This means we need the best ingredients.
As they say in the distilling world, garbage in, concentrated garbage out.
