Our Fermenters Are Here!

Hello everyone,

On April 18th, we reached another massive milestone: we just received four shipping containers full of equipment straight from Croatia!

The Key to Whisky: Our Letina Fermenters

To make whisky, you first have to make "beer." We need to ferment our grain to create a wash (an unhopped beer) at about 7 to 9% ABV, which will then be distilled.

That is exactly what the equipment behind me is for: our seven beautiful fermenters made by Letina, a Croatian company that does exceptional work. I want to give a huge shoutout to the team at Patenaude et Frères, our expert riggers and heavy equipment handlers, who just finished installing these giants.

We also received all of our receiving tanks. These are the vessels that will hold the alcohol as it comes off the stills, allowing us to separate what we call the heads, the hearts (the good whisky!), and the tails of the distillation.

The Grain Room Comes to Life

We also have some great company at the distillery for another week: the team from New Leaf. They are our grain handling equipment specialists. They are currently busy assembling all the machinery that will allow us to take our massive bulk bags of harvested grain, mill it into grist, and send it directly into our mash tun.

The Next and Final Step

All of these tanks and systems are now ready and in place. We are just waiting for the centrepiece: our stills! They are scheduled to arrive from Vancouver Island around late June or early July. This will be the very last major wave of equipment to arrive at the distillery.
